Day 5 of my 31 day challenge is my guilty pleasure. That’s easy, homemade baked goods. I’m always baking, it’s a good thing I have hungry brothers. If only they didn’t have so many calories!
So in lieu of a story, here is my recipe for Nutella stuffed Chocolate chip cookies… enjoy
It yields about 4 dozen or so.
¾ cup granulated sugar
¾ cup packed brown sugar (Plus a little extra, about 1/8 of a cup more loose)
1 Cup salted butter, softened
1 teaspoon vanilla
2 ¼ cups all-purpose flour (I use King Arthur)
1 teaspoon baking soda
½ teaspoon salt
1 package (12 ounces) semisweet chocolate
Now to get the Nutella to cooperate, we’re going to make little frozen drops of it. It’s possible to make them without this step. I’ve done it. It’s messier and takes longer to form, but great if you don’t have the time to freeze them.
Pour some Nutella into a frosting tube. I’ve also found a plastic baggie works great too. Just don’t melt it, otherwise it will spread too much. On a cookie sheet spread out some wax paper. Squeeze the Nutella into small dots about the size of a gumball. Pop these guys into the freezer until at least mostly hard. About an hour usually.
Next Preheat oven to 375ºF.
Mix the sugars, butter, vanilla and egg in large bowl until smooth. Stir in the flour, baking soda and salt. It’ll be a little thick, next stir in the chocolate chips. I usually do this a little at a time so I don’t make a huge mess. That’s probably just me though!
Get your frozen Nutella balls. Now this part you want to handle rather quickly, because the heat from your hands will melt the Nutella. Grab a ball of cookie dough, and press the Nutella ball into it, making sure it’s completely covered in cookie.
Place on parchment paper on a cookie sheet evenly spaced.
Bake 8-10 minutes or until light brown. Let cool slightly, then remove from the cookie sheet and cool them on a wire rack.
